Estrella del Ostro is a specialty Colombian coffee grown by small-scale producers in La Plata, Huila, along the western slopes of the Central Mountain Range. The town’s name traces back to the 16th century, when Spanish explorers arrived in search of gold but instead discovered silver — giving rise to the name La Plata.

Today, this mountainous landscape — defined by clay loam soils, flowing rivers, and temperatures between 17–28°C — provides the perfect environment for slow, even cherry development and refined sweetness in the cup.

What began as a small collaboration among producers in the township of Belén has steadily grown to include farmers from across La Plata, united by a shared commitment to quality. The name Estrella del Ostro, meaning Star of the Southern Wind, references the bright star visible above the mountain range where this coffee is cultivated — a symbol of origin, guidance, and deep connection to place.

Processing: Only fully ripe cherries are handpicked and depulped on the same day of harvest to preserve freshness and clarity. The coffee ferments in tiled tanks for around 24 hours before being carefully washed. It is then dried slowly on patios for 10–20 days, allowing the flavours to develop depth, balance, and a beautifully clean finish.

Whether enjoyed black or with milk, this beautiful coffee offers a sweet and balanced profile that is both comforting and vibrant. Expect layers of sweet toffee, complemented by notes of golden raisin. A bright candied blood orange carries through the finish, adding lift and freshness.
